Equipment

  • Rimmed Baking Sheet
  • Parchment paper
  • Wire rack
  • Large mixing bowl
  • Small mixing bowl
  • Saucepan
  • Tongs
  • Measuring spoons

Ingredients

Chicken Wings

  • 2 pounds chicken wings, split into drumettes and flats
  • 1 tablespoon baking powder, aluminum-free
  • ¾ teaspoon sea salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper or less, to taste
  • ¼ teaspoon black pepper

Hot Sauce Glaze

  • 3 tablespoons unsalted butter
  • 2 teaspoons honey
  • 1 teaspoon Worcestershire sauce
  • 3 tablespoons hot sauce

For Serving

  • chopped parsley
  • ranch or blue cheese dressing
  • celery sticks

Instructions

  • Preheat your oven to 425°F. Line a baking sheet with parchment paper or foil, then place a wire rack on top.
  • Pat the chicken wings very dry with paper towels.
  • In a small bowl, combine the baking powder, sea salt, smoked paprika, garlic powder, onion powder, dried oregano, dried thyme, cayenne pepper, and black pepper. Stir until well mixed.
  • Place the wings in a large bowl. Sprinkle the seasoning mixture over the top, then toss until the wings are evenly coated.
  • Arrange the wings in a single layer on the prepared wire rack, making sure they are not touching.
  • Bake for 20 minutes. Flip the wings, then continue baking for another 20 to 25 minutes, or until the wings are crispy, golden brown, and reach an internal temperature of 165°F.
  • While the wings are baking, melt the butter in a small saucepan over low heat. Stir in the honey and Worcestershire sauce. Remove from the heat, then stir in the hot sauce until smooth.
  • Transfer the baked wings to a large bowl. Pour the sauce over the wings and toss until evenly coated.
  • If desired, return the wings to the oven for about 5 minutes to help the glaze set.
  • Sprinkle with chopped parsley, if desired, and serve with ranch or blue cheese dressing and celery sticks.
