Mill your wheat berries using the finest setting.
Preheat your oven to 335 degrees (this temperature recommendation has only been tried with a glass loaf pan).
Grease a 5x9 glass loaf pan.
Melt the butter over medium heat in a small saucepan, whisking constantly to prevent burning. Turn off heat and set aside once melted.
In a large bowl add einkorn flour, coconut sugar, baking powder, baking soda, and salt. Whisk and set aside.
In a medium bowl, combine the egg, melted butter, bananas, and vanilla extract. Blend well and set aside.
Combine the wet and dry ingredient using a spatula.
Place your batter into the buttered loaf pan and place in the preheated oven.
Cook for 60-70 minutes or until the internal temperature hits 205 degrees.
Remove the loaf pan from the oven and transfer the banana bread to a cooling rack. Allow it to cool for at least 2 hours before slicing.
