You’ll also want extra butter to butter your loaf pan.
Step by Step Instructions:
Step 1: Mill your wheat berries using the finest setting.
Step 2: Preheat your oven to 335 degrees (this temperature recommendation has only been tried with a glass loaf pan).
Step 3: Grease a 5×9 glass loaf pan.
Step 4: Melt the butter over low medium heat in a small saucepan, whisking constantly to prevent burning. Turn off heat and set aside once melted.
Step 5: In a large bowl add einkorn flour, coconut sugar, baking powder, baking soda, and salt. Whisk together and set aside.
Step 6: In a medium bowl, combine the egg, melted butter, bananas, and vanilla extract. Blend well and set aside.
Step 7: Combine the wet and dry ingredient using a spatula.
Step 8: Place your batter into the buttered loaf pan and place in the preheated oven.
Step 9: Cook for 60-70 minutes or until the internal temperature hits 205 degrees.
Step 10: Remove the loaf pan from the oven and transfer the banana bread to a cooling rack. Allow it to cool for at least 2 hours before slicing.

Can banana bread be frozen?
Yes. Before freezing banana bread ensure that the bread has completly cooled, then slice, and wrap in plastic wrap, and insert slices into a freezer safe bag. Cutting the bread into slices allows you to thaw only need pieces. A freezer safe bag will lock in freshness and prevent freezer burn. Before closing the freezer safe bag release as much air as possible and label the bag with date to track time. When you are ready to eat, simply take out a slice of banana bread and place in the refrigerator to thaw.
Can banana bread be left out on the counter?
Yes. Eat the banana bread within 3 days to ensure freshness in an airtight container in a cool and dry spot. If you will not eat the banana bread within 3 days freeze it.
When is banana bread done?
You will know when the banana bread is done when it reaches an internal temperature of 205 degrees or insert a toothpick in the center of the bread and if comes out clean, it’s fully cooked. The banana bread should be golden as well.
Why did my banana bread sink in the middle?
A sunken middle indicates that you may have undercooked the bread or your baking soda and baking powder are expired.
